  1. 1/2 kg pork, sliced into thin, bite-sized cubes
  2. bamboo skewers (soaked in water)
For the Marinade
  1. 2 tablespoons Kecap Manis (Thai sweet soy sauce)
  2. 2 tablespoons lime juice
  3. 1 tablespoon peanut oil or sunflower oil
  4. 1 teaspoon ground cumin
  5. 2 teaspoons coriander
  6. 2 teaspoons turmeric
  7. 1 teaspoon salt
  8. 2 stalks lemongrass
For the Peanut Sauce
  1. 1 13.5oz can unsweetened coconut milk
  2. 1/4 cup curry paste
  3. 3/4 cup "natural" unsweetened, creamy peanut butter
  4. 1 1/2 teaspoon salt
  5. 3/4 cup sugar
  6. 2 tablespoons apple cider vinegar
  7. 1/2 cup water
For the Pork
  1. Combine all the ingredients for the marinade and pulse in a food processor.
  2. Soak the pork cubes in the marinade and refrigerate for at least an hour (the more hours, the better).
  3. Thread the pork cubes onto your pre-soaked wooden skewers.
  4. Cook on the grill over medium high heat, basting often with the marinade, for 15 minutes. Turn the skewers as many times as needed to ensure that meat is cooked through.
  5. Serve with the peanut sauce.
For the Peanut Sauce
  1. Put all of he ingredients in a medium bottom-heavy saucepan and bring to a gentle boil over medium heat, stirring constantly.
  2. Turn the heat down to low and continue to simmer for 3-5 minutes. Keep stirring.
  3. Remove from heat and allow to cool down before serving with the pork satay.
  1. Chicken can also be used for this recipe.
