  1. 1 tablespoon olive oil
  2. 2 cups ground beef
  3. 1 medium onion, finely chopped
  4. 2 garlic cloves, minced
  5. 1/2 cup potatoes, peeled and cut into small cubes
  6. salt & pepper to taste
  7. 1 teaspoon cumin
  8. 1 teaspoon nutmeg
  9. 1 teaspoon dried cilantro
  10. 1 cup leftover rice
  11. 2 tablespoons tomato sauce
  12. 1 teaspoon tomato paste
  13. 1/2 can of black beans
  14. 1/2 cup cheddar cheese, shredded
  15. 2 tomatoes, chopped
  16. 1/2 cup shredded romaine lettuce
  17. 4 large flour tortillas
  1. In a skillet over medium high heat, saute the ground beef along with the onions for 2 minutes. Add the garlic, potato cubes, salt, pepper, cumin, nutmeg and dried cilantro and cook until all of the ground beef is brown and cooked through and potatoes are golden brown.
  2. Add the rice and stir-fry for 2-3 minutes.
  3. Add the tomato sauce, tomato paste and black beans and toss until every grain of rice is coated with the sauce.
  4. Stir in the shredded cheddar cheese until it's melted into the rice.
  5. Remove from heat.
  6. Moisten each tortilla by placing it on a plate and microwaving it for 30 seconds, along with a small microwavable bowl half-filled with water that you can put in one corner of the microwave.
  7. Take the tortilla out of the microwave and lay it on a flat surface.
  8. Spoon some of the rice and beef mixture forming a rectangular shape on the center of a flour tortilla. Do not overload.
  9. Layer the tomatoes and shredded lettuce on top of the rice and beef mixture.
  10. Roll the tortilla into a log by pulling the left and right flap of the tortilla toward the center and over the burrito stuffing. Grab the bottom flap of the tortilla and tuck it over and then under the contents of the burrito and continue rolling it into a log.
  11. Wrap the burrito in foil.
